Care and Handling:
Callas are geotropic flowers, which is to say they are affected by gravity, the tips always seeking to grow upwards. To counter this, flowers that arrive in boxes may be turned upside down and left for 24 hours in the cooler. Then they can be processed. Alternatively Callas will straighten out in water after about 3 days. To process simply cut the stems with a very sharp blade, being careful not to rip or tear the green skin on the stem. The flowers should be hydrated in a low sugar holding solution, and held in the coolers.
